  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 250 milliliters
  • Bay leaf - 1
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
