- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 250 milliliters
- Bay leaf - 1
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste

Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.

- While the lentil sauce is simmering, cook the pasta according to package instructions in a separate pot of salted boiling water until al dente. Drain and set aside.
- Once the lentils are cooked, remove the bay leaf and season the sauce with salt and black pepper to taste.
- In a large mixing bowl, combine the drained pasta with the lentil sauce, adding the remaining tablespoon of olive oil and tossing to coat evenly.
- Serve hot, garnished with freshly chopped parsley.
