- Vegetable broth - 100 milliliters
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the rinsed chickpeas and diced tomatoes to the pan. Stir well and cook for about 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 5-7 minutes, stirring occasionally.
- Use an immersion blender or transfer the mixture to a blender and blend until smooth, creating a creamy sauce. Return it to the pan if blended separately.
- Season the sauce with salt, black pepper, and red pepper flakes if using. Stir in the chopped fresh basil.
- Once the pasta is cooked, drain it and add it directly into the sauce. Toss well to coat the pasta evenly in the sauce.
