  • Shrimp (peeled and deveined) - 200 grams
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Heavy cream - 100 ml
  • White wine - 50 ml
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside.
  4. In the same skillet, add white wine and let it simmer for 2 minutes, scraping any bits from the bottom of the pan.
  5. Add halved cherry tomatoes and cook for another 3-4 minutes until they soften.
  6. Stir in the heavy cream and bring the sauce to a gentle simmer. Season with salt and black pepper to taste.
  7. Return the shrimp to the skillet and mix well with the sauce. Cook for an additional 2 minutes.
  8. Add the cooked gluten-free pasta to the skillet and toss to coat it evenly with the sauce.
  9. Remove from heat, stir in the chopped basil, and serve immediately, garnished with grated Parmesan cheese if desired.
