- Gluten-free pasta - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Heavy cream - 100 ml
- White wine - 50 ml
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 20 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside.
- In the same skillet, add white wine and let it simmer for 2 minutes, scraping any bits from the bottom of the pan.
- Add halved cherry tomatoes and cook for another 3-4 minutes until they soften.
- Stir in the heavy cream and bring the sauce to a gentle simmer. Season with salt and black pepper to taste.
- Return the shrimp to the skillet and mix well with the sauce. Cook for an additional 2 minutes.
- Add the cooked gluten-free pasta to the skillet and toss to coat it evenly with the sauce.
- Remove from heat, stir in the chopped basil, and serve immediately, garnished with grated Parmesan cheese if desired.
