- Asparagus - 150 grams, trimmed and cut into 2 cm pieces
- Mushrooms (cremini or button) - 200 grams, sliced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 150 ml
- Nutritional yeast - 2 tablespoons
- Coconut cream - 100 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 50 ml of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, until they release their moisture and start to brown.
- Stir in the asparagus pieces and cook for another 4-5 minutes until they are tender but still crisp.
- Pour in the vegetable broth and bring to a simmer. Stir in the nutritional yeast and coconut cream, mixing well to create a creamy sauce.
- Add the cooked pasta to the skillet, tossing to coat it in the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
- Season with lemon juice, salt, and black pepper to taste. Cook for an additional 2 minutes to heat through.
- Serve hot, garnished with fresh chopped parsley.
