- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
- Add the diced zucchini and bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are tender.
