- Pasta (spaghetti or linguine) - 160 grams
- Fava beans (fresh or frozen) - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 100 ml
- Lemon juice - 1 tablespoon
- Fresh basil leaves - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fava beans to the pan and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the fava beans are tender.
- Remove the pan from heat and use an immersion blender to puree the fava bean mixture until smooth. If you don't have an immersion blender, transfer it to a regular blender and blend until creamy.
- Stir in the lemon juice, chopped basil, salt, and black pepper to taste into the fava bean sauce.
- Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta to the fava bean sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency.
- Serve hot, garnished with additional basil and a sprinkle of nutritional yeast if desired.
