Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Fava beans (fresh or frozen) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 100 ml
  • Lemon juice - 1 tablespoon
  • Fresh basil leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fava beans to the pan and cook for about 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the fava beans are tender.
  5. Remove the pan from heat and use an immersion blender to puree the fava bean mixture until smooth. If you don't have an immersion blender, transfer it to a regular blender and blend until creamy.
  6. Stir in the lemon juice, chopped basil, salt, and black pepper to taste into the fava bean sauce.
  7. Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta to the fava bean sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency.
  8. Serve hot, garnished with additional basil and a sprinkle of nutritional yeast if desired.
