  • Black pepper - to taste

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cherry tomatoes and red pepper flakes to the skillet, cooking until the tomatoes begin to soften, about 3-4 minutes.
  4. Pour in the white wine and bring to a simmer, allowing it to reduce for about 2-3 minutes.
  5. Add the cleaned mussels to the skillet, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any that do not open.
  6. Stir in the cooked pasta and chopped parsley, adding reserved pasta water as needed to loosen the sauce. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with extra parsley if desired.
