Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes and red pepper flakes to the skillet, cooking until the tomatoes begin to soften, about 3-4 minutes.
- Pour in the white wine and bring to a simmer, allowing it to reduce for about 2-3 minutes.
- Add the cleaned mussels to the skillet, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any that do not open.
- Stir in the cooked pasta and chopped parsley, adding reserved pasta water as needed to loosen the sauce. Season with salt and black pepper to taste.
