  • Parmesan cheese - 30 grams, grated
  • Lemon juice - 1 tablespoon

  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
  3. Add the chopped artichoke hearts to the skillet and cook for another 3-4 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a simmer. Allow it to cook for about 5 minutes to reduce slightly.
  5. Stir in the heavy cream and Parmesan cheese, mixing well until the cheese melts and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
  6. Add lemon juice, salt, and black pepper to taste. Mix well.
  7. Toss the cooked pasta into the sauce, ensuring it is well coated. Heat through for another minute.
  8. Serve immediately, garnished with fresh parsley.
