  • Capers - 2 tablespoons, rinsed and drained
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the capers and halved cherry tomatoes, cooking for an additional 5-7 minutes until the tomatoes soften.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  6. Add the drained pasta to the skillet with the caper sauce. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  7. Stir in the chopped parsley, lemon juice, and season with salt, black pepper, and red pepper flakes if using.
  8. Serve immediately, garnished with extra parsley if desired.
