- Capers - 2 tablespoons, rinsed and drained
- Cherry tomatoes - 200 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the capers and halved cherry tomatoes, cooking for an additional 5-7 minutes until the tomatoes soften.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the caper sauce. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
- Stir in the chopped parsley, lemon juice, and season with salt, black pepper, and red pepper flakes if using.
- Serve immediately, garnished with extra parsley if desired.
