  • Scallops - 200 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the scallops to the skillet and season with salt and black pepper. Cook for about 2-3 minutes on each side until they are golden brown and cooked through. Remove the scallops from the skillet and set aside.
  4. In the same skillet, add the halved cherry tomatoes and cook for 3-4 minutes, until they start to soften.
  5. Pour in the white wine and bring to a simmer, scraping any bits from the bottom of the skillet. Allow it to cook for 2-3 minutes until slightly reduced.
  6. Return the scallops to the skillet, add the cooked pasta, and toss everything together. If the mixture seems dry, add reserved pasta water gradually until you reach the desired consistency.
  7. Stir in the chopped parsley, lemon juice, and red pepper flakes if using. Adjust seasoning with salt and pepper to taste.
  8. Serve immediately, garnished with additional parsley if desired.
