Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, sautéing until softened, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the drained cannelloni beans and canned diced tomatoes. Add Italian seasoning, salt, and black pepper. Simmer the sauce for about 10 minutes to allow the flavors to meld.
- Using a fork or a masher, lightly mash some of the cannelloni beans in the sauce to create a creamy texture, while leaving some whole for added texture.
