Ingredients

  • Gluten-free pasta - 200 grams
  • Fresh calamari - 300 grams, cleaned and sliced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 250 grams, halved
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced calamari to the skillet and cook for 2-3 minutes until they start to turn opaque.
  4. Stir in the halved cherry tomatoes and cook for another 2 minutes until they soften.
  5. Pour in the white wine and allow it to simmer for about 5 minutes, letting the alcohol evaporate and the sauce thicken slightly.
  6. Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is well-coated in the sauce.
  7. Season with salt, black pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes to heat through.
  8. Remove from heat, sprinkle with chopped fresh parsley, and serve immediately.
