- Broccoli - 250 grams, cut into florets
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add broccoli florets to the skillet and sauté for about 5 minutes until they are bright green and tender.
- Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the broccoli is soft.
- Using an immersion blender, blend the broccoli mixture until smooth. If you don't have an immersion blender, carefully transfer the mixture to a regular blender and blend until smooth, then return to the skillet.
- Season the broccoli sauce with salt, black pepper, and red pepper flakes (if using). Stir in the lemon juice.
- Once the pasta is done, reserve about 1/2 cup of pasta water, then drain the pasta and add it directly to the broccoli sauce in the skillet.
- Toss the pasta in the sauce, adding reserved pasta water as needed to achieve desired consistency.
- Stir in grated Parmesan cheese and mix well. Serve hot, garnished with extra cheese and a drizzle of olive oil if desired.
