Ingredients

  • Broccoli - 250 grams, cut into florets
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add broccoli florets to the skillet and sauté for about 5 minutes until they are bright green and tender.
  4. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the broccoli is soft.
  5. Using an immersion blender, blend the broccoli mixture until smooth. If you don't have an immersion blender, carefully transfer the mixture to a regular blender and blend until smooth, then return to the skillet.
  6. Season the broccoli sauce with salt, black pepper, and red pepper flakes (if using). Stir in the lemon juice.
  7. Once the pasta is done, reserve about 1/2 cup of pasta water, then drain the pasta and add it directly to the broccoli sauce in the skillet.
  8. Toss the pasta in the sauce, adding reserved pasta water as needed to achieve desired consistency.
  9. Stir in grated Parmesan cheese and mix well. Serve hot, garnished with extra cheese and a drizzle of olive oil if desired.
