  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and add the orecchiette pasta. Cook according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta is cooking, rinse the broccoli rabe under cold water, trim the tough ends, and chop into bite-sized pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add the chopped broccoli rabe to the skillet and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
  5. Once the pasta is cooked, reserve a cup of the pasta water and drain the rest. Add the pasta to the skillet with the broccoli rabe.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce. Cook for another 2 minutes to combine flavors.
  7. Serve hot, topped with grated Parmesan cheese if desired.
