Steps
- Bring a large pot of salted water to a boil and add the orecchiette pasta. Cook according to package instructions until al dente, about 10-12 minutes.
- While the pasta is cooking, rinse the broccoli rabe under cold water, trim the tough ends, and chop into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the chopped broccoli rabe to the skillet and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve a cup of the pasta water and drain the rest. Add the pasta to the skillet with the broccoli rabe.
- Toss everything together, adding reserved pasta water as needed to create a light sauce. Cook for another 2 minutes to combine flavors.
- Serve hot, topped with grated Parmesan cheese if desired.
