- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
- Grate the bottarga into the skillet, stirring to combine with the garlic and oil, and cook for another minute.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the bottarga sauce, tossing to coat, and adding reserved pasta water as necessary to achieve your desired sauce consistency.
- Stir in the lemon zest, lemon juice, chopped parsley, and season with salt and black pepper to taste.
- Serve immediately, garnished with extra parsley and additional grated bottarga if desired.
