Ingredients

  • Spaghetti - 160 grams
  • Salt cod (baccalà) - 200 grams, soaked and desalted
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the salt cod in water for at least 24 hours, changing the water several times to remove excess salt.
  2. Once the baccalà is desalted, drain and cut it into bite-sized pieces.
  3. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  5. Add the pieces of baccalà to the skillet and cook for 5-7 minutes, stirring occasionally, until the fish is cooked through and flakes easily.
  6. Add the halved cherry tomatoes and red pepper flakes (if using) to the skillet. Cook for another 5 minutes until the tomatoes soften.
  7. Combine the cooked spaghetti with the sauce in the skillet, adding reserved pasta water as needed to achieve desired consistency.
  8. Season with salt and black pepper to taste, and stir in the chopped parsley just before serving.
