- Spaghetti - 160 grams
- Salt cod (baccalà) - 200 grams, soaked and desalted
- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the salt cod in water for at least 24 hours, changing the water several times to remove excess salt.
- Once the baccalà is desalted, drain and cut it into bite-sized pieces.
- Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the pieces of baccalà to the skillet and cook for 5-7 minutes, stirring occasionally, until the fish is cooked through and flakes easily.
- Add the halved cherry tomatoes and red pepper flakes (if using) to the skillet. Cook for another 5 minutes until the tomatoes soften.
- Combine the cooked spaghetti with the sauce in the skillet, adding reserved pasta water as needed to achieve desired consistency.
- Season with salt and black pepper to taste, and stir in the chopped parsley just before serving.
