  • Heavy cream - 50 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the asparagus by trimming the tough ends and cutting them into 2-inch pieces.
  3. In a skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  4. Add the asparagus pieces to the skillet and sauté for about 5 minutes until they are bright green and slightly tender.
  5. Pour in the vegetable broth and simmer for another 5 minutes until the asparagus is cooked through.
  6. Using an immersion blender or a regular blender, blend the asparagus mixture until smooth, then return it to the skillet.
  7. Stir in the heavy cream, grated Parmesan cheese, lemon zest, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.
  8. Drain the pasta and add it to the skillet, tossing gently to combine and coat the pasta in the asparagus sauce.
  9. Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
