  • Anchovy fillets - 4 fillets (about 40 grams)
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon
  • Parmesan cheese - for serving (optional, ensure Halal)

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the anchovy fillets to the skillet, breaking them apart with a wooden spoon until they dissolve into the oil.
  5. If using, add the red pepper flakes and stir for another 30 seconds.
  6. Once the pasta is cooked, reserve about 1/2 cup of pasta cooking water, then drain the pasta.
  7. Add the drained pasta to the skillet with the anchovy sauce and toss to combine, adding reserved pasta water as needed to loosen the sauce.
  8. Stir in the chopped parsley, lemon zest, salt, and black pepper to taste.
  9. Serve immediately, garnished with grated Parmesan cheese if desired.
