- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Lemon zest - 1 teaspoon
- Parmesan cheese - for serving (optional, ensure Halal)
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the anchovy fillets to the skillet, breaking them apart with a wooden spoon until they dissolve into the oil.
- If using, add the red pepper flakes and stir for another 30 seconds.
- Once the pasta is cooked, reserve about 1/2 cup of pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet with the anchovy sauce and toss to combine, adding reserved pasta water as needed to loosen the sauce.
- Stir in the chopped parsley, lemon zest, salt, and black pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese if desired.
