- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Fresh spinach - 50 grams
- Parmesan cheese - 30 grams, grated
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the vegetable broth and keep it warm over low heat.
- In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add the diced zucchini and bell pepper, cooking for about 5 minutes until softened.
- Stir in the Arborio rice and toast it for 2 minutes, stirring frequently.
- Begin adding the warm vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
- Once the rice is nearly cooked (about 15 minutes), bring a separate pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- When the rice is creamy and al dente, stir in the fresh spinach, grated Parmesan, and chopped basil. Season with salt and black pepper to taste.
- Drain the pasta and gently fold it into the risotto mixture until well combined.
- Serve hot, garnished with additional Parmesan and basil if desired.
