  • Nutmeg (freshly grated) - a pinch
  • Lemon zest - 1 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Season with salt and black pepper.
  4. In a mixing bowl, combine the ricotta cheese, grated Parmesan, nutmeg, and lemon zest. Mix until smooth and creamy.
  5. Once the pasta is cooked, reserve about 1/2 cup of the pasta water and drain the rest. Add the pasta to the skillet with the spinach.
  6. Add the ricotta mixture to the pasta, stirring well to combine. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  7. Serve immediately, garnished with additional Parmesan cheese and a sprinkle of black pepper.
