  • Fresh spinach - 50 grams
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant.
  3. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
  4. In a bowl, combine the ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
  5. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  6. Add the drained pasta to the pan with spinach and garlic, then stir in the ricotta mixture. Mix well, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  7. Serve immediately, garnished with fresh basil.
