Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant.
- Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
- In a bowl, combine the ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
- Add the drained pasta to the pan with spinach and garlic, then stir in the ricotta mixture. Mix well, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
