Ingredients

  • Spaghetti - 200 grams
  • Sea urchin roe (ricci di mare) - 100 grams
  • Cherry tomatoes - 250 grams, halved
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the halved cherry tomatoes to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until the tomatoes soften and release their juices.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the drained spaghetti to the skillet with the tomatoes.
  5. Gently fold in the sea urchin roe and a splash of the reserved pasta water. Toss everything together to combine and create a creamy sauce, cooking for an additional 2-3 minutes.
  6. Remove from heat and stir in the chopped parsley and lemon zest. Adjust seasoning if necessary.
  7. Serve immediately, garnished with additional parsley and a drizzle of olive oil if desired.
