Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Once the pasta is cooked, reserve 1/2 cup of pasta cooking water, then drain the pasta and add it directly to the skillet with the garlic and oil.
- Gently toss the pasta in the skillet, adding the reserved pasta water a little at a time to create a light sauce.
- Add the fresh sea urchin to the pasta, along with lemon juice, lemon zest, chopped parsley, salt, and black pepper. Toss gently to combine, ensuring the sea urchin warms through without breaking apart too much.
- Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
