Ingredients

  • Pasta (e.g., orecchiette) - 160 grams
  • Turnip greens (rape) - 200 grams, cleaned and chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Add the chopped turnip greens to the skillet, stirring until wilted, about 3-4 minutes.
  4. Pour in the vegetable broth and simmer for another 5 minutes, allowing the flavors to meld.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the turnip greens mixture.
  6. Toss everything together, adding reserved pasta water as needed for moisture. Season with salt and black pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese on top.
