- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Parmesan cheese (grated) - 40 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons for garnish
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.

- Add the sliced leeks and sauté for about 5 minutes until they are soft and translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable broth and bring to a simmer. Let it cook for about 3-4 minutes to allow the flavors to meld.
- Once the pasta is ready, reserve 50 ml of the pasta cooking water, then drain the pasta and add it to the skillet with the leeks.
- Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt and black pepper to taste, and stir in the grated Parmesan cheese until well combined.
- Serve hot, garnished with fresh chopped parsley.
