- Dried porcini mushrooms - 30 grams
- Garlic - 4 cloves, minced
- Extra virgin olive oil - 4 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- Soak the dried porcini mushrooms in warm water for about 15 minutes until rehydrated. Drain and chop them roughly, reserving the soaking liquid.
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until the garlic is fragrant but not browned, about 1-2 minutes.
- Add the chopped porcini mushrooms to the skillet and sauté for another 3-4 minutes, allowing the flavors to meld.
- Carefully pour in about 100 ml of the reserved mushroom soaking liquid to the skillet, stirring to combine. Let it simmer for 2-3 minutes.
- Once the pasta is done, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the mushroom mixture.
- Toss the pasta with the sauce, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.
- Remove from heat, stir in the chopped parsley, and serve immediately.
