  • Dried porcini mushrooms - 30 grams
  • Spaghetti or fettuccine - 160 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Shallot, finely chopped - 1 medium
  • Vegetable broth - 250 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes (optional) - 1/4 teaspoon

Steps

  1. Soak the dried porcini mushrooms in warm water for about 15 minutes until rehydrated. Drain and chop them, reserving the soaking liquid.
  2. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing for about 2-3 minutes until fragrant and translucent.
  4. Add the chopped porcini mushrooms to the skillet and cook for another 3-4 minutes, stirring occasionally.
  5. Pour in the vegetable broth and a few tablespoons of the reserved mushroom soaking liquid. Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld.
  6. Add the cooked pasta directly into the skillet, tossing it with the mushroom sauce. If the mixture seems dry, add a bit more reserved pasta water until desired consistency is reached.
  7. Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped parsley before serving.
