Ingredients
- Pasta (spaghetti or linguine) - 160 grams
- Fresh tomatoes (diced) - 300 grams
- Zucchini (sliced thin) - 150 grams
- Zucchini flowers (cleaned and torn) - 4-6 pieces
- Garlic (minced) - 2 cloves
- Extra virgin olive oil - 3 tablespoons
- Fresh basil leaves - 10 leaves
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese (optional, for serving) - 30 grams
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the diced tomatoes to the skillet, stir well, and let them cook down for about 5-7 minutes until they start to break down and form a sauce.
- Stir in the sliced zucchini and season with salt and pepper. Cook for an additional 5 minutes until the zucchini is tender but still crisp.
- Add the zucchini flowers to the skillet and gently mix them in, cooking for another 2-3 minutes.
- Combine the drained pasta with the sauce, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Toss to combine well.
- Remove from heat and stir in fresh basil leaves. Adjust seasoning if necessary.
- Serve hot, garnished with grated Parmesan cheese if desired.
