Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Canned tuna in olive oil - 200 grams
  • Canned diced tomatoes - 400 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 10, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Grated kosher Parmesan cheese - for serving (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, typically around 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the canned diced tomatoes (with their juice) to the skillet and stir well. Season with salt, black pepper, and red pepper flakes (if using). Allow the sauce to simmer for about 10 minutes.
  4. Drain the canned tuna and add it to the tomato sauce, breaking it up gently with a spoon. Stir in the chopped basil and cook for an additional 2-3 minutes to heat through.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time if needed to achieve desired sauce consistency.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with additional basil and grated kosher Parmesan cheese, if desired.
