Ingredients

  • Spaghetti - 160 grams
  • Fresh tomatoes - 400 grams, diced
  • Canned mackerel in olive oil - 200 grams, drained
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - for serving

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.
  4. Stir in the diced tomatoes and season with salt and black pepper. Cook for about 10 minutes, allowing the tomatoes to break down and form a sauce.
  5. Once the tomatoes are softened, gently fold in the drained mackerel and chopped basil. Cook for an additional 2-3 minutes to heat through.
  6. When the pasta is ready, reserve a cup of pasta water and then drain the spaghetti.
  7. Add the drained spaghetti to the skillet with the tomato and mackerel sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  8. Serve immediately, garnished with additional basil and Parmesan cheese if desired.
