Ingredients
- Spaghetti - 160 grams
- Fresh tomatoes - 400 grams, diced
- Canned mackerel in olive oil - 200 grams, drained
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 2 tablespoons
- Fresh basil leaves - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - for serving
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.
- Stir in the diced tomatoes and season with salt and black pepper. Cook for about 10 minutes, allowing the tomatoes to break down and form a sauce.
- Once the tomatoes are softened, gently fold in the drained mackerel and chopped basil. Cook for an additional 2-3 minutes to heat through.
- When the pasta is ready, reserve a cup of pasta water and then drain the spaghetti.
- Add the drained spaghetti to the skillet with the tomato and mackerel sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Serve immediately, garnished with additional basil and Parmesan cheese if desired.
