Ingredients

  • Spaghetti - 160 grams
  • Cherry tomatoes - 250 grams
  • Sea urchin (uni) - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to break down and form a sauce. Season with salt, black pepper, and red pepper flakes if using.
  4. Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the tomato sauce.
  5. Add sea urchin to the pasta and toss gently to combine, adding reserved pasta water a little at a time until the desired sauce consistency is achieved.
  6. Stir in chopped basil and adjust seasoning if necessary. Serve immediately, garnished with extra basil if desired.
