Ingredients
- Spaghetti - 160 grams
- Cherry tomatoes - 250 grams
- Sea urchin (uni) - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to break down and form a sauce. Season with salt, black pepper, and red pepper flakes if using.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the tomato sauce.
- Add sea urchin to the pasta and toss gently to combine, adding reserved pasta water a little at a time until the desired sauce consistency is achieved.
- Stir in chopped basil and adjust seasoning if necessary. Serve immediately, garnished with extra basil if desired.
