- Octopus, cleaned - 300 grams
- Fresh tomatoes, diced - 400 grams
- Garlic, minced - 3 cloves
- Olive oil - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a separate pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the diced fresh tomatoes to the pot and cook for about 10-12 minutes, stirring occasionally, until the tomatoes soften and form a sauce.
- Meanwhile, in a separate pot, bring water to a boil and add the cleaned octopus. Simmer for about 20 minutes until tender. Remove and chop into bite-sized pieces.
- Once the tomato sauce is ready, season with salt, black pepper, and lemon juice. Stir in the chopped octopus and cook for an additional 5 minutes.
- Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Serve the pasta hot, garnished with chopped parsley.
