- Kosher sausage (beef or turkey) - 200 grams, casings removed
- Canned diced tomatoes - 400 grams
- Canned cannellini beans - 240 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 250 ml
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Grated kosher parmesan cheese - for serving (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Push the vegetables to the side of the pot and add the kosher sausage. Break it apart with a wooden spoon, cooking until browned, about 5-7 minutes.
- Stir in the canned diced tomatoes and vegetable broth, bringing the mixture to a simmer.
- Add the rinsed cannellini beans and let the sauce simmer for 10 minutes, allowing the flavors to meld.
- Meanwhile, cook the pasta in a separate pot according to package instructions until al dente. Drain and set aside.
- Once the sauce has thickened slightly, season with salt and black pepper to taste. Stir in the chopped fresh basil.
- Combine the cooked pasta with the sauce in the pot, stirring to coat the pasta evenly.
- Serve hot, topped with grated kosher parmesan cheese if desired.
