  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to soften and release their juices.
  5. Add the cleaned mussels to the skillet, cover, and cook for about 5-7 minutes until the mussels open. Discard any mussels that remain closed.
  6. Stir in the cooked spaghetti and reserved pasta water, mixing well to combine. Season with salt, black pepper, and red pepper flakes (if using).
  7. Remove from heat and add the torn basil. Toss to combine and let sit for 2 minutes to absorb flavors.
  8. Serve the pasta in bowls with a squeeze of fresh lemon juice over the top.
