Steps
- Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
- In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to soften and release their juices.
- Add the cleaned mussels to the skillet, cover, and cook for about 5-7 minutes until the mussels open. Discard any mussels that remain closed.
- Stir in the cooked spaghetti and reserved pasta water, mixing well to combine. Season with salt, black pepper, and red pepper flakes (if using).
- Remove from heat and add the torn basil. Toss to combine and let sit for 2 minutes to absorb flavors.
- Serve the pasta in bowls with a squeeze of fresh lemon juice over the top.
