  • Garlic - 2 cloves
  • Fresh basil leaves - 15 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the sauce. Dice the ripe tomatoes and finely chop the garlic.
  3. In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the diced tomatoes to the skillet and season with salt and black pepper. Let the tomatoes cook for about 10 minutes, stirring occasionally until they break down into a sauce.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
  6. Add the drained pasta to the skillet with the tomato sauce and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  7. Tear the fresh basil leaves and add them to the pasta. Toss gently to combine.
  8. Serve the pasta warm, garnished with additional basil leaves and a drizzle of olive oil if desired.
