Ingredients
- Pasta (spaghetti or linguine) - 160 grams
- Ripe tomatoes - 400 grams
- Garlic - 2 cloves
- Fresh basil leaves - 15 grams
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the sauce. Dice the ripe tomatoes and finely chop the garlic.
- In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the diced tomatoes to the skillet and season with salt and black pepper. Let the tomatoes cook for about 10 minutes, stirring occasionally until they break down into a sauce.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the tomato sauce and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Tear the fresh basil leaves and add them to the pasta. Toss gently to combine.
- Serve the pasta warm, garnished with additional basil leaves and a drizzle of olive oil if desired.
