Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, prepare the sauce. Blanch the ripe tomatoes in boiling water for 30 seconds, then transfer them to an ice bath. Peel the skins off, remove the seeds, and chop the tomatoes.
- In a large skillet, heat the extra virgin olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
