Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Cherry tomatoes - 250 grams, halved
  • Fresh basil leaves - 1/2 cup, chopped
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese (optional, ensure kosher) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the halved cherry tomatoes and cook for 5-7 minutes until they start to soften and release their juices.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the tomatoes, along with the chopped basil, and toss everything together.
  7. If the pasta seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
  8. Season with salt and black pepper to taste, then serve hot, topped with grated Parmesan cheese if desired.
