Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Sun-dried tomatoes (packed in oil) - 80 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams, chopped
  • Parmesan cheese (optional, for serving) - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the chopped sun-dried tomatoes to the skillet and stir for another 2-3 minutes to combine the flavors.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the sun-dried tomatoes.
  5. Toss the pasta in the skillet over low heat, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  6. Stir in the chopped fresh basil, and season with salt and black pepper to taste.
  7. Serve hot, topped with grated Parmesan cheese if desired.
