- Pasta (spaghetti or linguine) - 200 grams
- Octopus (cleaned) - 300 grams
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Parsley (fresh) - 2 tablespoons, chopped
- Lemon (zest and juice) - 1 medium
- Olive oil - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- In a separate pot, add the octopus and cover with water. Bring to a simmer and cook for about 20 minutes until tender. Drain and cut into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook until they start to soften, about 3-4 minutes.
- Stir in the cooked octopus and season with salt, black pepper, lemon zest, and lemon juice. Cook for an additional 2-3 minutes to combine flavors.
- Add the cooked pasta to the skillet, tossing everything together. If the mixture seems dry, add a little reserved pasta water to reach the desired consistency.
- Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve immediately.
