Ingredients
- Chicken breast - 300 grams
- Zucchini - 1 medium, spiralized
- Bell pepper - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season the chicken breast with salt and black pepper, then add it to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
- Add the diced bell pepper and sauté for 3-4 minutes until softened.
- Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to blister.
- Meanwhile, slice the cooked chicken into strips.
- Add the spiralized zucchini to the skillet and toss everything together, cooking for an additional 2-3 minutes until the zucchini is just tender.
- Return the sliced chicken to the skillet and mix well. Stir in the chopped basil and adjust seasoning with salt and pepper as needed.
- Serve immediately, garnished with additional basil if desired.
