Ingredients

  • Gluten-free pasta - 200 grams
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Parmesan cheese, grated - 30 grams
  • Garlic, minced - 1 clove
  • Extra virgin olive oil - 80 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, prepare the pesto by combining the fresh basil leaves, pine nuts, minced garlic, and grated Parmesan cheese in a food processor.
  3. Pulse the mixture until finely chopped, then gradually add the extra virgin olive oil while blending until smooth. Season with salt and black pepper to taste.
  4. Once the pasta is done, reserve a small cup of the cooking water, then drain the pasta and return it to the pot.
  5. Add the pesto to the pasta, mixing well to coat. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  6. Serve immediately, garnished with additional grated Parmesan and a drizzle of olive oil if desired.
