Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Red bell pepper - 1 medium (approximately 150 grams)
  • Yellow bell pepper - 1 medium (approximately 150 grams)
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, kosher) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, preheat your oven to 200°C (400°F).
  3. Cut the red and yellow bell peppers into strips and place them on a baking sheet.
  4. Drizzle the bell peppers with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat.
  5. Roast the peppers in the preheated oven for 15-20 minutes, or until they are tender and slightly charred.
  6. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  7. Once the pasta is cooked, reserve 1/4 cup of pasta cooking water, then drain the pasta.
  8. Add the cooked pasta to the skillet with the garlic, along with the roasted bell peppers and chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
  9. Season with additional salt and black pepper to taste, and serve hot, garnished with grated Parmesan cheese if desired.
