- Pasta (spaghetti or linguine) - 150 grams
- Red bell pepper - 1 medium (approximately 150 grams)
- Yellow bell pepper - 1 medium (approximately 150 grams)
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, kosher) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, preheat your oven to 200°C (400°F).
- Cut the red and yellow bell peppers into strips and place them on a baking sheet.
- Drizzle the bell peppers with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat.
- Roast the peppers in the preheated oven for 15-20 minutes, or until they are tender and slightly charred.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Once the pasta is cooked, reserve 1/4 cup of pasta cooking water, then drain the pasta.
- Add the cooked pasta to the skillet with the garlic, along with the roasted bell peppers and chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
- Season with additional salt and black pepper to taste, and serve hot, garnished with grated Parmesan cheese if desired.
