  • Garlic, minced - 2 cloves
  • Black pepper, freshly cracked - 1 teaspoon
  • Salt - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.
  4. Once the pasta is cooked, reserve 1 cup of the pasta cooking water, then drain the spaghetti.
  5. Add the drained spaghetti to the skillet with the garlic and olive oil, tossing to combine.
  6. Gradually add the grated pecorino cheese and a splash of the reserved pasta water, tossing continuously until a creamy sauce forms.
  7. Season with freshly cracked black pepper and adjust salt to taste.
  8. Serve immediately, garnished with chopped fresh parsley and additional pecorino cheese if desired.
