  • Green olives (pitted and sliced) - 100 grams
  • Black olives (pitted and sliced) - 50 grams
  • Garlic (minced) - 2 cloves
  • Olive oil - 3 tablespoons
  • Fresh parsley (chopped) - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 20 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta cooking water before draining.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced green and black olives to the skillet and cook for 2-3 minutes, stirring occasionally.
  4. Add the cooked pasta to the skillet along with the reserved pasta water, red chili flakes, salt, and black pepper. Toss everything together until well combined and heated through.
  5. Remove from heat and stir in the chopped parsley. If desired, sprinkle with grated Parmesan cheese before serving.
