  • Walnuts - 100 grams
  • Garlic - 2 cloves
  • Olive oil - 4 tablespoons
  • Parmesan cheese (grated) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Water - for cooking pasta

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the walnut sauce. In a food processor, combine the walnuts and garlic cloves. Pulse until finely chopped.
  3. In a skillet, heat the olive oil over medium heat. Add the walnut and garlic mixture to the skillet and sauté for about 2-3 minutes until fragrant.
  4. Once the pasta is cooked, reserve 1 cup of pasta cooking water, then drain the pasta.
  5. Add the drained pasta to the skillet with the walnut sauce. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  6. Stir in the grated Parmesan cheese and chopped parsley. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with additional Parmesan cheese and parsley if desired.
