- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Water - for cooking pasta
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the walnut sauce. In a food processor, combine the walnuts and garlic cloves. Pulse until finely chopped.
- In a skillet, heat the olive oil over medium heat. Add the walnut and garlic mixture to the skillet and sauté for about 2-3 minutes until fragrant.
- Once the pasta is cooked, reserve 1 cup of pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet with the walnut sauce. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Stir in the grated Parmesan cheese and chopped parsley. Season with salt and black pepper to taste.
- Serve immediately, garnished with additional Parmesan cheese and parsley if desired.
