  • Fusilli pasta - 150 grams
  • Cantaloupe - 200 grams, diced
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced cantaloupe to the skillet, season with salt and black pepper, and cook for 3-4 minutes until slightly softened.
  4. Once the pasta is done, reserve 1/2 cup of pasta water and then drain the pasta.
  5. Add the drained pasta to the skillet with the cantaloupe mixture, along with the reserved pasta water, lemon juice, and chopped basil. Toss everything together over low heat for 2-3 minutes.
  6. Serve the pasta warm, garnished with grated Parmesan cheese if desired.
