- Fusilli pasta - 150 grams
- Cantaloupe - 200 grams, diced
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
- Lemon juice - 1 tablespoon
Steps
- Bring a pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced cantaloupe to the skillet, season with salt and black pepper, and cook for 3-4 minutes until slightly softened.
- Once the pasta is done, reserve 1/2 cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the cantaloupe mixture, along with the reserved pasta water, lemon juice, and chopped basil. Toss everything together over low heat for 2-3 minutes.
- Serve the pasta warm, garnished with grated Parmesan cheese if desired.
