- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Fresh basil leaves - 8 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes until they are tender and lightly golden.
- Stir in the chopped fresh tomatoes and season with salt and black pepper to taste. Cook for an additional 5-7 minutes until the tomatoes have softened and created a sauce.
- Once the pasta is done, reserve a cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the zucchini and tomato sauce, tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.
- Stir in chopped basil and remove from heat.
- Serve immediately, garnished with grated Parmesan cheese if desired.
