Ingredients

  • Pasta (spaghetti or linguine) - 180 grams
  • Zucchini - 2 medium (about 250 grams)
  • Feta cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, wash and slice the zucchini into thin half-moons.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and lightly browned.
  5. Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until the tomatoes begin to soften.
  6. Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the zucchini and tomatoes.
  7. Crumble the feta cheese over the pasta, add the fresh basil, lemon juice, and a splash of reserved pasta water to create a light sauce. Toss everything together until well combined.
  8. Season with salt and black pepper to taste. Serve immediately, garnished with extra basil if desired.
