- Zucchini - 2 medium (about 250 grams)
- Feta cheese - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
- While the pasta is cooking, wash and slice the zucchini into thin half-moons.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and lightly browned.
- Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until the tomatoes begin to soften.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the zucchini and tomatoes.
- Crumble the feta cheese over the pasta, add the fresh basil, lemon juice, and a splash of reserved pasta water to create a light sauce. Toss everything together until well combined.
- Season with salt and black pepper to taste. Serve immediately, garnished with extra basil if desired.
