  • Ricotta cheese - 150 grams
  • Parmesan cheese - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced zucchini, red bell pepper, and carrot to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

  5. In a bowl, combine the ricotta cheese, grated Parmesan, chopped basil, salt, and black pepper. Mix well until creamy.
  6. Add the cooked pasta to the skillet with the vegetables. Pour in the ricotta mixture and a little reserved pasta water, stirring until everything is well combined and heated through.
  7. Adjust the seasoning with more salt and pepper if needed. Serve warm, garnished with extra basil and grated Parmesan.
