- Ricotta cheese - 150 grams

Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini, red bell pepper, and carrot to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften slightly.
- In a bowl, combine the ricotta cheese, grated Parmesan, chopped basil, salt, and black pepper. Mix well until creamy.
- Add the cooked pasta to the skillet with the vegetables. Pour in the ricotta mixture and a little reserved pasta water, stirring until everything is well combined and heated through.
- Adjust the seasoning with more salt and pepper if needed. Serve warm, garnished with extra basil and grated Parmesan.
