Ingredients

  • Whole grain spaghetti - 160 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fennel bulb - 1 small, thinly sliced
  • Cherry tomatoes - 200 grams, halved
  • Raisins - 30 grams
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Saffron - a pinch
  • Lemon zest - from 1 lemon

Steps

  1. Bring a large pot of salted water to a boil, then add the spaghetti and cook according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced fennel to the skillet, cooking for another 5 minutes until the fennel is tender.
  4. Stir in the cherry tomatoes, raisins, toasted pine nuts, saffron, lemon zest, salt, and black pepper. Cook for an additional 5-7 minutes until the tomatoes have softened and released their juices.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the vegetable mixture.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce. Adjust seasoning with more salt and pepper to taste.
  7. Remove from heat, stir in the chopped parsley, and serve warm.
