- Whole grain spaghetti - 160 grams
- Olive oil - 2 tablespoons
- Yellow onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fennel bulb - 1 small, thinly sliced
- Cherry tomatoes - 200 grams, halved
- Raisins - 30 grams
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Saffron - a pinch
- Lemon zest - from 1 lemon
Steps
- Bring a large pot of salted water to a boil, then add the spaghetti and cook according to package instructions until al dente.
- In a large skillet, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced fennel to the skillet, cooking for another 5 minutes until the fennel is tender.
- Stir in the cherry tomatoes, raisins, toasted pine nuts, saffron, lemon zest, salt, and black pepper. Cook for an additional 5-7 minutes until the tomatoes have softened and released their juices.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the vegetable mixture.
- Toss everything together, adding reserved pasta water as needed to create a light sauce. Adjust seasoning with more salt and pepper to taste.
- Remove from heat, stir in the chopped parsley, and serve warm.
